Cooking the perfect turkey

  • Size matters: Allow about 450 g (1 lb) per person for a festive meal with some leftovers.
  • Prep simply: Remove giblets, pat dry, season generously, and slide butter under the skin for crispness. Let the bird rest at room temperature for 30 minutes before roasting.
  • Roast gently: Cook for roughly 20 minutes per 500 g plus 90 minutes at 180 °C (fan). The juices should run clear and a thermometer in the thigh should hit 75 °C.
  • Rest and carve: Cover loosely with foil for at least 20 minutes after cooking — this keeps it juicy and easier to carve.
